How Does Natural Processing Work?
After harvesting, the coffee cherries are carefully sorted and spread out on raised drying beds or concrete patios. The whole cherries dry slowly under the sun for several weeks.
During drying, the cherries are turned regularly to ensure even moisture loss and to prevent mold or uncontrolled fermentation.
Once the cherries have dried completely, the dried skin and fruit are removed, revealing the green coffee beans.
